Another new year, another set of new year resolutions. I’ve never been the best with sticking to my new year resolutions but this year I promised myself I’d eat more unprocessed foods and generally be more healthy.
I’m not a morning person at the best of times which is why a healthy breakfast is such a struggle. I almost always opt for a strong cup of coffee and a quick slice of toast with vegemite as I race around like a mad woman trying to get to work.
A friend suggested I should invest in a good blender so I could experiment with breakfast smoothies. Seriously, it is now my new best friend! Just toss in the ingredients, blend for a minute and pour. It’s so quick and easy I almost feel guilty!
This blueberry and spinach smoothie is one of my favourites so far. It’s packed with health boosting vitamins, antioxidants and essential proteins which makes you feel fuller for longer. The blueberries and banana offset the taste of the spinach beautifully. I also love using dates in smoothies. They give them a delicious natural sweetness but if you’re not a sweet tooth it tastes perfectly fine without them.
This breakfast smoothie is a perfect way to kickstart your day. Since I have been drinking this, I haven’t had such an urgent need for a coffee in the morning. Who said it takes time to be healthy?
Serves 1
You will need:
- One small banana
- One handful of spinach
- One large handful of fresh or frozen blueberries
- Two tablespoons of rolled oats
- One tablespoon of chia seeds
- One tablespoon of Linseed, Sunflower and Almond Mix (LSA)
- Half a cup of milk (Almond milk, soy or coconut water can be used as a substitute)
- One or two dates for added sweetness (optional)
Simply peel the banana and throw all the ingredients into the blender and blend until smooth and creamy. If you prefer a more liquid consistency just add more milk.
For best results drink straight away or store in an airtight container. Or, with one of these little retro beauties, you can even take it with you on the way to work.
This smoothie is packed with sustaining vitamins to make you feel healthy from the inside out. You’re skin will be glowing in no time! I hope you all are sticking to your new year resolutions. I am certainly trying!
