Silly season has officially touched down in London.The Regent Street lights have been switched on, pulling casual onlookers to the shops like mosquitos to light and John Lewis continues to play with our heart strings with its cute Christmas adverts. But is it the season to be jolly or the season to spend? I’m not ready to battle the angry hordes of shoppers on Oxford just yet. To avoid spending the better half of 2014 paying off a hefty credit card, I’m trying to think of creative, personalised gifts for my loved ones this year. And what’s better than the gift of food with a homemade touch?
White chocolate chunk cookies are one of my all time favourites cookies. And by adding half of a cup of macadamia nuts and a hint of nougat they are simply irresistible, giving the buttery cookie an added crunch. If you dress them up in pretty packaging, they are the perfect sweet treat for a friend at Christmas or just to enjoy for yourself.
You will need
125 grams of butter (softened)
3/4 cup of brown sugar
1 egg
1 teaspoon of vanilla essence
1 cup plain flour
1 cup self raising flour
2 tablespoons of milk
1 cup of chopped white chocolate (I use Swiss Mountain Bar)
1/2 cup of chopped macadamia nuts
Directions
1. Pre-heat the oven to 170C and line a baking tray with non-stick baking paper
2.Cream butter and sugar until well mixed
3. Add vanilla essence and egg and mix well
4. Gradually add the flour to the mix until well combined
5. Using a tablespoon roll the mixture into walnut sized balls and place on baking tray
6. Bake for approximately 15 minutes or when golden brown. When cooled transfer to wire rack.
