Cinnamon Spiced French Toast

- 3 eggs
- ⅓ cup of milk
- ¼ cup of single cream
- ¼ cup of caster sugar
- 1 teaspoon of ground cinnamon
- 1 teaspoon of vanilla essence
- 20g butter
- Loaf of brioche or challah
- 3 bananas
- ¼ cup of maple syrup
- Lightly whisk the eggs, milk, cream, sugar. cinnamon and vanilla essence in a shallow bowl.
- Heat a frying pan over medium-high heat and melt the butter until it is extremely hot.
- Cut the bread into 8 slices which are approximately ½ inch thick. Dip the slices into the egg mixture until well covered.
- Cook the bread in batches for 1- 2 minutes each side.
- Serve with halved banana slices and maple syrup.
